What encouraged you to work in this career field?
I started out as a server when I was 18 just to have a job that highlighted my customer service skills, and was flexible with my school schedule.

What’s the most rewarding part of your job?
The most rewarding part of my job is knowing that I am redefining and raising the bar for quality and service of Cuban cuisine in Tallahassee.

What do you enjoy most about your work?
I thoroughly enjoy bringing happiness to my customers as they enjoy my cuisine.

What has been your greatest accomplishment?
My greatest accomplishment thus far is unfinished, Kubano! has been in business for over two years...that is just the beginning.

What motivates you daily?
My lady Samantha and my nine month old son give me motivation to keep going, no matter how tough it gets.

What education/training does a person need to get started in your field?
Formal Culinary training at an accredited program. There are certificates and two or four-year degrees. Also, on the job training at restaurants of all kinds under a ACF Certified Chef.

What advice do you have for those considering entering into a career in your career field?
Be willing to do everything in the kitchen from dishwasher to expo. Also learn and work both front and back of the house positions, i.e. sever or bartender vs grill cook or garde manger. The biggest thing is to LOVE what you do, customers and others can sense your passion and love of your job...as well as your lack of it!

What is the hardest thing you have ever done in your life?
Start and run my own business.
